delicious mulled wine cakes with variable filling (e.g. plums, marzipan, chocolate or nut-nougat cream)
First, put the flour, mulled wine, cream, rum, sugar, and all the spices in a mixing bowl and mix everything well. Then dissolve the dried yeast in warm water and mix it together with the flour, baking soda, and the liquid mixture. Knead on a slow speed for about 4 minutes, then knead for about 5 minutes on a fast speed. Then, portion the finished dough into muffin-sized balls, cover, and let rest for 15 minutes. In the meantime, prepare the fillings. As already noted in the list of ingredients, it is important that the ingredients for the filling are frozen, as this makes them easier to portion. – Form the hazelnut and nougat spread (possibly with a melon baller), marzipan, and vanilla pudding into small balls. Press the plums into the balls with your fingers (marzipan makes the balls nice and moist and keeps them fresh for longer). Now press the dough balls into the center with your thumb to create a hole in the center that’s easy to fill, allowing you to add the fillings and reseal the ball. Once the balls are filled and sealed, place them in muffin tins with the tops facing down. Let them rise for about 20-30 minutes and bake at 180°C for 20-25 minutes, depending on the size, until golden and golden brown (place a baking tray with water in the oven). Finally, spread with jam and immediately sprinkle with desiccated coconut. Last but not least, stick the cherries in the center of the snowball with a little icing. A great alternative to traditional Christmas cookies!
