Christmas nut cookies

Ingredients for 1 servings:

  • 300 g butter or margarine
  • 200 g peanut butter
  • 300 g brown sugar
  • 2 packets of vanilla sugar
  • 2 eggs (size L)
  • 200 g flour
  • 150 g nuts, ground or almonds
  • 2 tsp baking powder
  • 1 pinch of gingerbread spice
  • 1 tsp cinnamon, ground
  • Nuts, whole or almonds

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mix the flour with the baking powder with the ground nuts or almonds. Cream the butter or margarine, peanut butter, sugar, vanilla sugar, and eggs until fluffy, then slowly add the flour and nut or almond mixture, stirring until a creamy consistency is reached. Finally, add the gingerbread spice and cinnamon and mix well. Using a teaspoon, place small heaps onto a greased baking sheet, leaving a little space between each cookie as it will spread during baking. Finally, place a nut or almond on each heap and bake for about 15 minutes at 150-170 degrees Celsius, depending on your oven type. If you like, dust the cookies with powdered sugar after they have cooled.
