Ingredients for 4 servings:
- 2 tbsp pine nuts, roasted, chopped
- 300 g zucchini, small, finely diced
- 2 shallots, cut into fine rings
- 2 clove(s) garlic, chopped
- 4 tbsp olive oil
- 100 ml dry white wine
- basil, chopped
- 80 g mascarpone
- 2 tbsp Parmesan, freshly grated
- salt and pepper
- Cayenne pepper

delicious and quick pasta sauce
Heat oil in a pan, fry shallots until translucent, add zucchini and garlic, sauté lightly, and deglaze with white wine. Season to taste, add basil, and bring to a boil. Melt mascarpone and stir in Parmesan, season again. Toss with drained pasta and sprinkle with chopped pine nuts. Serve with Parmesan, if desired.
