Ingredients for 6 servings:
- 6 egg yolks
- 3 tbsp, heaped sugar
- 3 pinches of vanilla powder
- 300 g Stollen, or gingerbread or other Christmas biscuits
- 6 tbsp cognac or other liqueur
- 450 g cream
- Sauce, (fruit sauce)
Instructions
Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes
Whisk the egg yolks, sugar, and vanilla until thick and creamy. Soak the stollen or other pastry in cognac, liqueur, or fruit juice, then stir into the egg custard and fluff with the whipped cream. Fold in evenly. Pour into a dish lined with cling film. The film will stick well if moistened with water. Freeze for at least 12 hours. To serve, remove the parfait from the dish, peel off the film, slice, and serve with fruit sauce.
