Christmas Rum Nut Cubes

Ingredients for 2 servings:

  • 300 g butter, softened
  • 2 eggs
  • 300 g sugar
  • 6 eggs, including the yolk
  • 300 g walnuts, grated
  • 300 g chocolate, semi-sweet, grated
  • 200 g flour
  • 6 eggs, including the egg whites, beaten stiffly
  • 150 g powdered sugar
  • 1 tbsp rum
  • 3 tbsp milk

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Beat 300g butter, 300g sugar, 2 eggs, and 6 egg yolks until fluffy. Stir in 300g grated walnuts, 300g grated semisweet chocolate, and 200g flour. Beat 6 egg whites until stiff peaks form and fold in. Spread on a greased baking sheet (we used the deeper one) and bake at 200°C for about 20-25 minutes. Mix 150g powdered sugar with 1 tablespoon of rum and 3 tablespoons of milk and brush onto the dough while still hot. Cut into cubes immediately. Tastes great after letting them sit for a few days.
