Christmas spice – Florentine

Ingredients for 8 servings:

  • 125 g sugar
  • 2 packets of vanilla sugar
  • 250 ml cream
  • 1 tbsp lemon(s) – zest, grated
  • 1 tbsp orange(s) – zest, grated
  • 1 tbsp cinnamon
  • 1 tsp cardamom
  • 1 pinch of clove(s), powder
  • 1 pinch of nutmeg
  • 50 g butter or margarine
  • 200 g almond(s), flakes
  • 100 g hazelnuts, flakes
  • 1 cup oatmeal
  • 50 g flour
  • 1 bar of chocolate (block chocolate or chocolate glaze)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

tasty and not too sweet

Bring the cream to a boil with the sugar, vanilla sugar, and orange and lemon zest (stirring frequently). Then stir in the spices and butter, remove the pan from the heat, and let it cool. Then stir in the almonds, nuts, oats, and flour and let it swell briefly. Drop the mixture with a tablespoon onto a baking sheet lined with baking paper and flatten slightly. Bake the Florentines for 15-20 minutes at 180-200°C (356-400°F) (be careful, they can quickly overcook; I bake them in my fan-assisted oven at 180°C for about 15 minutes). Place the Florentines upside down on a wire rack and let cool. Meanwhile, melt the chocolate in a bain-marie and brush the bottom of the Florentines with it. When the chocolate has solidified, they’re ready.
