Christmas Stollen

Ingredients for 1 servings:

  • 375 g flour
  • 1 tbsp baking powder
  • 125 g instant oat flakes
  • 175 g sugar
  • 1 tbsp vanilla sugar
  • ½ tsp salt
  • 4 almonds, ground bitter almonds
  • 4 cl rum
  • 1 pinch of cardamom
  • 1 pinch of nutmeg blossom
  • 2 eggs
  • 175 g butter
  • 250 g quark (low-fat quark)
  • 125 g currants
  • 250 g raisins
  • 150 g almond(s), chopped
  • 100 g candied lemon, chopped
  • 100 g butter
  • 100 g powdered sugar

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Sift the flour and baking powder into a bowl, add the oats, sugar, vanilla sugar, salt, bitter almonds, rum, spices, eggs, butter (cut into pieces), quark, currants, raisins, almonds, and candied lemon peel. Quickly mix all ingredients into a smooth dough. If the dough is sticky, add another 1-2 tablespoons of oats. Spread the dough between sheets of cling film and form the Stollen. Line a baking tray with baking paper and place the Stollen on top. Bake the Stollen in a preheated oven at 180°C for 50-60 minutes. Brush the hot Stollen several times with butter and sprinkle with sifted powdered sugar.
