Ingredients for 12 servings:

  • 400 g whipped cream
  • 500 g low-fat curd cheese
  • 500 g mascarpone
  • 800 g raspberries (frozen)
  • 200 g sugar
  • 2 packets of vanilla sugar
  • 400 g speculatius (spiced speculatius)
  • some cinnamon powder
  • some cocoa powder
  • some Amaretto

Instructions

Working time approx. 20 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 20 minutes

Tiramisu with speculatius and raspberries

Whip the cream until stiff. Mix the mascarpone, quark, sugar, and vanilla sugar. Fold in the cream. Spread about 3 tablespoons of the cream into a baking dish, then place a layer of speculatius biscuits on top (dip the biscuits in Amaretto first, if desired). Arrange the berries on top. Spread most of the cream over the berries and finally add another layer of speculatius biscuits and a thin layer of the remaining cream. Then refrigerate. Sprinkle with cocoa and cinnamon before serving, if desired.
