Christmas Trees Made from Meringue

- 3 Protein
- 105 g Extra fine sugar
- 20 g Food starch
- 1 pinch Salt
- 75 g Powdered sugar
- Food coloring green
- Mix sugar and starch until crumbly. Beat the egg whites with salt until they are completely stiff. Then stir in the sugar-starch mixture spoon-wise, stirring constantly. When everything is stirred in, keep beating until the mixture is very stiff, shiny and the tips stop when you pull out the paddle. Then sift in powdered sugar and add the food coloring, depending on the depth of the color. Now mix everything on a low level until you can no longer see the powdered sugar and the color has evenly distributed.
- Preheat the oven to 90-100 ° O / bottom heat. Line the tray with baking paper. Pour the mixture into a piping bag and cut off enough of the tip to make an opening of approx. 5 mm.
- Then sprinkle small dots on the paper in a circle. Fill in the middle and put another layer of polka dots on top. Become ever narrower towards the top, so that a cone, i.e. a small Christmas tree, is created. Allow the sprayed trees to air dry for approx. 30 minutes and then put them in the oven to dry. This can take about 3 – 4 hours. If they can be lifted, are light and airy, and sound a little hollow, they are dry through. Then turn off the oven and let them cool down in it. Then they can – depending on your own creativity – be decorated.
- They are a little eye-catcher on the Christmas coffee table, but also a delicious “Haps” with your own cup of coffee or tea ……………… and the leftover protein from the Christmas bakery did not have to be disposed of ……………
