Ingredients for 1 servings:

  • 1 beef steak(s) from the neck or high rib (chuck eye steak)
  • 2 onions
  • 2 garlic cloves
  • 1 bottle of dark beer
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp paprika powder
  • 1 tbsp thyme

Take a bowl for the marinade and add all the spices and the peeled and quartered onion. Peel the garlic cloves and press them in firmly. Pour the dark beer into the bowl and mix everything well. Unwrap the chuck-eye steak and let it rest in the marinade for a good 8 hours. After the time has elapsed, remove the steak and place it immediately on the preheated grill. Grill for 2 minutes on each side. Remove the steak from the grill, place it on a wooden board, and cover it with a lid to allow it to cook for a while. Place a cast iron pan—or another pan suitable for grilling—on the grill and reduce the marinade by about half. Serve the chuck-eye steak with just a few onions and the reduced marinade. An absolute must if you not only love beef but also love thyme.
