just the thing for Father’s Day

A good hour before grilling, peel the onions and slice them into rings or half rings. Sprinkle a mixture of 3-4 tablespoons of salt and sugar over them, mix, and marinate for about an hour. Grill the ox chop gently on both sides directly over the embers, then let it cook in the indirect heat until it reaches the desired internal temperature. Meanwhile, braise the onions in a pan with the wild garlic oil. Season the ox chop with coarse salt and pepper. Slice the meat and serve with the onions on bread rolls. This is the perfect recipe for purists or for a Father’s Day celebration, without any fanfare.
