Ingredients for 1 servings:

  • 5 egg whites
  • 450 g powdered sugar
  • 2 tsp cinnamon
  • 1 tbsp cherry brandy
  • 500 g ground almonds

My secret recipe for cinnamon stars! Makes about 45.

Beat the egg whites until stiff. Carefully mix the powdered sugar, cinnamon, and kirsch with the egg whites. Take about 8 tablespoons of this mixture for the icing and put it in a small bowl. Stir the ground almonds into the remaining powdered sugar and egg mixture. Refrigerate the dough for about 1 hour. Roll out the dough between plastic wrap to about 1/2 cm thick and cut out stars. Place the stars on a baking sheet lined with baking paper and spread with the icing. Let the cinnamon stars rest overnight! The next day, bake the cinnamon stars in a preheated oven at 220°C for exactly 5 minutes and then let them cool on a wire rack. Tip: Because the cinnamon stars have rested overnight, they are soft right after baking and don’t need to sit in a cookie tin with apple slices for weeks before eating.
