Ingredients for 1 servings:

  • 3 egg whites
  • 250 g powdered sugar
  • 400 g ground almonds
  • 2 tsp cinnamon

Beat the egg whites until stiff. Stir in the powdered sugar while continuing to beat. Reserve about 6 tablespoons of the sugar and egg mixture for later coating and set aside while chilled. Stir the cinnamon and almonds into the remaining mixture and also chill (about 30 minutes). Roll out the dough in portions between cling film to a thickness of about 1 cm. Cut out stars using the appropriate cutters and place on baking sheets lined with baking paper. Carefully brush with the cooled egg white mixture. Bake the first baking sheet at 150°C top/bottom heat (120°C fan/gas mark 1) for about 15-20 minutes – no preheating required! The next baking sheets then only need 12-15 minutes.
