Ingredients for 4 servings:
- 600 g carrot(s), parsley root, parsnips
- 1 onion(s)
- 3 tbsp oil
- 1 liter meat broth
- 1 pack of tomato(s) pureed
- 250 g minced meat
- 3 tbsp rice
- 1 egg(s)
- salt and pepper
- 100 g sour cream
- Paprika powder

Vegetable soup with meatballs
Clean the vegetables, cut them into even pieces, and dice them. Heat the finely chopped onion in the oil, sauté the fat until translucent, add the vegetables, and sauté. Pour in the meat broth and bring the tomatoes to a boil. Mix the ground meat, rice, egg, and spices, form nut-sized dumplings, add them to the boiling vegetable broth, and simmer with the vegetables for 30 minutes. Stir in the sour cream at the end.
