Citrus Chutney

Ingredients for 1 servings:

  • 4 oranges
  • 2 lemons
  • 1 tsp mustard seeds
  • 3 juniper berries
  • 1 small onion(s)
  • 3 tbsp vinegar (white wine vinegar)
  • Chili flakes
  • 100 g gelling sugar, 1:3
  • 1 lime(s), the juice
  • 2 tbsp grapefruit juice
  • 1 tsp ginger, grated

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the oranges and lemons with a knife and fillet them. Collect any juice that runs out. Add the remaining ingredients except the sugar and bring everything to a boil in a saucepan. Then stir in the sugar and let it cook until the chutney begins to set. For me this takes about 10 minutes, but this can vary. While hot, pour it into a screw-top jar and turn it upside down to cool. This tart and sour chutney tastes particularly good with fish or grilled food. If you prefer it sweeter, use 1:2 gelling sugar. For a more appealing look, you can also slice a red onion into rings; this will then stand out darkly in the chutney.
