Classic BBQ sauce

Ingredients for 1 servings:

  • 3 cloves garlic
  • some salt
  • 250 g tomato ketchup
  • 150 ml broth
  • 1 cup of espresso, approx. 3 tbsp
  • 2 tbsp molasses or sugar beet syrup
  • 1 tbsp soy sauce
  • 1 tbsp mustard, hot
  • 1 tbsp lemon juice
  • 1 tsp, heaped paprika powder, sweet
  • ¼ tsp cayenne pepper
  • ½ tsp ginger powder

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 30 minutes; Total time approx. 1 day 1 hour

Peel and finely dice the garlic cloves, sprinkle with a little salt, and crush into a paste either in a mortar or with the blade of a large knife. Place all ingredients in a saucepan and simmer uncovered over low heat for 15-20 minutes until thickened. Cool, then cover and let stand overnight. Makes about 500 ml.
