Ingredients for 1 servings:

  • 1 packet of pudding powder (vanilla)
  • ½ liter of milk
  • 1 pinch of salt
  • 30 g sugar
  • 200 g butter, room temperature
  • 50 g powdered sugar

Basic recipe, easy to adapt

Make the pudding with pudding powder, milk, a pinch of salt, and sugar according to the package instructions. Allow to cool, stirring frequently to prevent a skin from forming (or alternatively, place cling film over the pudding before cooling). Cream room-temperature butter until fluffy, then stir in the icing sugar. Add the cooled pudding mixture a tablespoon at a time and fold in. This is enough to fill one cake. Overall, patience is worth it; however, the pudding and butter really do need to be roughly the same temperature, otherwise lumps will form. Tips: This recipe is very easy to adapt, e.g., with other types of pudding or, to make a mocha cream, replace half the milk with filter coffee.
