Sugar syrup for mixed drinks and desserts

Syrup for cocktails is also known in technical terms as sugar syrup. Simply boil both ingredients in a saucepan and then simmer for about 3 minutes. Once cooled, the mixture will keep for months if bottled. If the sugar content is lower, the syrup will not keep as long. This sugar syrup has 28 Baumé when hot and about 30-32 Baumé when cooled. Yes, that’s right, there is even a unit of measurement that indicates the sugar content. You measure it with a sugar scale. It looks a bit like a thermometer. It has a weight at the bottom that sinks deeper or deeper depending on the density of the sugar solution. Use the sugar syrup for things like Whiskey Sours, Tom Collins or Daiquiris and many other cocktails. The Turkish puff pastry cake Baclava, for example, is soaked in sugar syrup.
