Ingredients for 4 servings:
- 4 beef roulades
- 4 onions, diced
- 4 gherkins, cut into strips
- 2 slice(s) bacon, fattier, cut into strips
- 4 tsp mustard, medium hot
- 4 tbsp vinegar
- 1 vegetable stock cube
- ½ sauce cake
- salt and pepper
- 1 tsp herbs de Provence
- oil
- 1 tbsp sour cream
- possibly roux, dark
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Season the roulades with salt and pepper and spread with mustard. Arrange the diced onions, bacon strips and cucumber sticks on top of the roulades and carefully roll them up. Pin the rolls together using roulade pins or tie them with kitchen string. Brown them all over in a little oil in a pressure cooker, then remove from the pan. Pour in a good 3/8 liter of water, add the vinegar and crumble in the stock cube. Add the roulades and steam for 45 minutes, then release the steam. Remove the roulades from the pan. Stir the gingerbread into the sauce, add the herbs de Provence, season with salt and pepper and thicken with a roux if desired. Bring back to a boil and finally stir in the sour cream. We serve this with potato dumplings and salad.
