- 1 tsp orange peel, grated
- 300 ml vodka
- 300 ml brandy
- 200 g sugar
- 300 ml water
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Wash, peel, pit, and dice the peaches. Place the flesh and seeds, along with the lemon and orange zest, in a sealable container with a capacity of at least 2 liters. Pour in the vodka and brandy. Bring the water and sugar to a boil and stir until the sugar has completely dissolved. Simmer for another 3-5 minutes, then skim off the foam, let the solution cool to approximately 50°C, and pour it into the infusion mixture. Seal the container tightly and let it stand in a cool, dark place for 3 weeks. After this time, strain and filter the infusion mixture. Gently squeeze out the infusion mixture and discard it. Return the liqueur to the cleaned infusion container and, again with the container tightly closed, let it mature for 2-3 weeks. Filter the liqueur again and bottle it in sterilized bottles. Infusion period: August – September. Aging time: 5-6 weeks. Shelf life: up to one year. Alcohol content: approximately 20% vol.
