Ingredients for 4 servings:
- 250 g carrot(s)
- 3 tbsp oil
- 1 liter meat broth (instant also works)
- Salt
- Sugar
- pepper
- ½ tsp parsley, dried
- ½ tsp basil, dried

Wash and grate the carrots, then cut them into approximately 0.5 cm thick slices. Heat the oil in a large pot and sauté the carrots. Pour in the meat broth and simmer gently for 20 to 25 minutes, until the carrots are tender but still have a bit of a bite. Add the basil and season the soup with salt, pepper, and a little sugar. Serve garnished with parsley. This soup is ideal as a light starter to a great meal.
