Ingredients for 1 servings:
- 100 g butter, cut into small pieces
- 225 g flour
- ½ tsp baking powder
- 1 pinch of salt
- 100 g sugar, brown, fine
- 100 g desiccated coconut
- 2 eggs, beaten
- 4 tbsp milk
- Butter for the mold
- Flour for the mold

Grease and flour a 25 cm loaf pan. Sift flour, baking powder, and salt into a bowl. Rub the butter into the mixture with your fingers until a crumbly dough forms. Stir in the sugar, desiccated coconut, eggs, and milk. The dough should now be soft enough to drip from a spoon. Pour the batter into the pan and smooth it down. Bake in a preheated oven at 160°C for about 30 minutes.
