Coconut chicken

Ingredients for 4 servings:

  • 2 tbsp desiccated coconut, preferably fresh
  • Oil, mild
  • 1 chicken
  • 1 pinch of saffron powder
  • 1 pinch of chili powder
  • 1 tbsp coriander powder
  • n. B. Salt
  • 1 tsp ginger powder, 1 tsp more if needed
  • ½ liter coconut milk

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Sauté the desiccated coconut in 2 tablespoons of oil, then set aside. Wash the chicken, pat dry, and cut into 6-8 pieces. Brown them in oil on all sides in a large pot. Then add the saffron, chili powder, coriander, salt, and ginger, and deglaze with the coconut milk. Cover and simmer the chicken pieces over moderate heat until tender. Arrange the chicken pieces on plates, add the sauce, and sprinkle with the desiccated coconut. Serve with rice.
