Coconut chocolate cake

Ingredients for 1 servings:

  • 250 g margarine
  • 200 g sugar
  • 5 eggs
  • 250 g flour
  • 1 packet of baking powder
  • 2 tsp coffee cream
  • 30 g cocoa powder
  • 125 g desiccated coconut
  • 60 g sugar
  • 3 eggs
  • 100 g butter
  • Cake icing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sheet cake

For the pastry, mix the margarine with the sugar and gradually add the eggs. Mix the flour with the baking powder and stir into the pastry. Finally, add the cocoa and coffee cream and mix. Spread the pastry onto a baking sheet lined with baking paper. For the coconut mounds, mix the desiccated coconut with the sugar, eggs, and softened butter. Use a teaspoon to place small mounds all over the pastry. Then place the cake in the preheated oven at 180 degrees Celsius and bake for about 35-40 minutes (test with a toothpick). The coconut mounds will sink into the pastry during baking. The cake tastes best when it has cooled and covered with chocolate icing.
