Ingredients
- 100 ml Coconut milk
- 300 ml Cream
- 0,5 Chopped onion
- 0,5 tsp Garlic paste
- 1 tsp Grated ginger
- 0,5 tbsp Tomato paste
- 1 tsp Vegetable extract (see vegetable extract recipe)
- 100 g Crème fraîche with herbs
- 50 ml White wine
- 0,5 tbsp Clarified butter
- Ground white pepper
- Chilli from the mill
- Soy sauce light
- Ground cumin
- Lemongrass powder
Instructions
- Chop the onion and sweat in the clarified butter. Roast the garlic paste, vegetable extract and tomato paste.
- Then deglaze with white wine and let it reduce.
- Add coconut milk and cream and bring to the boil. Season with soy sauce and spices and finally stir in the crème fraîche with herbs. If the sauce is too thin, thicken a little with a ball of flour butter (see flour butter recipe).
