Ingredients for 4 servings:
- 600 ml coconut milk
- 150 g sugar
- 1 ½ vanilla pod(s)
- 1 ½ lime(s), zest and juice
Instructions
Working time approx. 45 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 45 minutes
Halve the vanilla pods and scrape out the seeds with the back of a knife. Heat the coconut milk and sugar together in a saucepan and boil gently for one minute. Remove from the heat and add the lime zest, lime juice, and vanilla pods. Cool the mixture in a bowl of cold water, then transfer to a bowl and freeze for up to 4 hours. Stir occasionally to ensure even freezing.
