Mango Sorbet

Ingredients for 4 servings:

  • 3 mangoes (350 g each)
  • 3 tbsp lemon juice
  • 300 g raspberries (frozen)

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Peel the mangoes, remove the flesh from the stone, cut into cubes, and puree. Stir in the lemon juice. Place in the freezer for 3-4 hours. Remove at least three times and whisk. Thaw the raspberries, puree, and pass through a sieve. Puree the frozen mango mixture again, quickly transfer it to a piping bag, and pipe into chilled glasses. Pour the raspberry sauce over the mixture.
