Coconut milk vanilla pudding with mango

Ingredients for 4 servings:

  • 1 bag(s) pudding powder, vanilla
  • 2 tbsp sugar
  • 400 ml coconut milk
  • 1 mango(s)
  • Desiccated coconut

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours 25 minutes

Vegan

Peel the mango, cut into pieces, and freeze. Mix the pudding mix with the sugar and stir into approximately 100 ml of coconut milk until smooth. Dilute the remaining coconut milk with approximately 300 ml of water and pour into a saucepan. Stir in the mixed pudding mix and cook for at least 1 minute while stirring. Pour the pudding into dessert glasses and refrigerate for at least 3 hours. Remove the mango pieces from the freezer and puree before serving. Spread the mango puree over the pudding and garnish with the coconut flakes.
