Coconut Plum Cake

The perfect coconut plum cake recipe with a picture and simple step-by-step instructions.

  • 500 g Fresh plums
  • 260 g Flour
  • 2 tsp Baking powder
  • 60 g Coconut flakes
  • 200 g Butter
  • 60 g Sugar
  • 2 packet Vanilla sugar
  • 1 pinch Salt
  • 4 Eggs
  • 1 tbsp Sifted powdered sugar
  1. Preheat the oven to 180 ° C (fan oven 160 ° C). Halve the plums and remove the stones. Mix the flour, baking powder and coconut flakes.
  2. Beat the butter, sugar, vanilla sugar and a pinch of salt with the whisk of the hand mixer until foamy for at least 8 minutes. Stir in the eggs one after the other for 1/2 minute. Stir in the flour mixture at the lowest level.
  3. Put the dough in a greased springform pan (26 cm diameter) and spread evenly with a spatula. Spread the plum halves on the dough and press in a little. Bake on a wire rack in the hot oven in the lower third of the oven for about 60 minutes let cool down.
  4. Remove the springform rim from the cake, place the cake on a plate and serve dusted with the icing sugar.
