Coconut Plum Cake

- 500 g Fresh plums
- 260 g Flour
- 2 tsp Baking powder
- 60 g Coconut flakes
- 200 g Butter
- 60 g Sugar
- 2 packet Vanilla sugar
- 1 pinch Salt
- 4 Eggs
- 1 tbsp Sifted powdered sugar
- Preheat the oven to 180 ° C (fan oven 160 ° C). Halve the plums and remove the stones. Mix the flour, baking powder and coconut flakes.
- Beat the butter, sugar, vanilla sugar and a pinch of salt with the whisk of the hand mixer until foamy for at least 8 minutes. Stir in the eggs one after the other for 1/2 minute. Stir in the flour mixture at the lowest level.
- Put the dough in a greased springform pan (26 cm diameter) and spread evenly with a spatula. Spread the plum halves on the dough and press in a little. Bake on a wire rack in the hot oven in the lower third of the oven for about 60 minutes let cool down.
- Remove the springform rim from the cake, place the cake on a plate and serve dusted with the icing sugar.
