Ingredients for 2 servings:
- 400 g cod fillet(s)
- salt and pepper
- 1 bunch of soup vegetables (carrots, leeks, celery)
- 3 m.-sized potatoes
- 1 onion(s)
- 30 g butter
- 100 ml vegetable stock
- 100 ml cream
- Parsley
- 1 tbsp breadcrumbs
- 2 tbsp cheese, grated
- some butter flakes

Clean the fish and season with salt and pepper. Trim the vegetables and potatoes and cut into 1 cm cubes, and cut the leek into 1 cm rings. Roughly dice the onion. Melt the butter in a saucepan and sauté the vegetables. Pour in the broth and cream and simmer for 10 minutes. Season with salt and pepper. Place the vegetables in an ovenproof dish and sprinkle with the chopped parsley. Place the fish on top. Sprinkle with breadcrumbs and grated cheese and top with knobs of butter. Bake in a preheated oven at 180°C for approximately 30-35 minutes.
