Ingredients for 4 servings:

  • 600 g fish fillet(s) (cod fillet)
  • 300 g bacon, diced
  • 4 large onions
  • 2 cloves garlic
  • 3 cans of coconut milk
  • 300 ml cream
  • 4 dashes sauce (piri sauce)
  • 50 g raisins to 100 g
  • Clarified butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Cod fillet with coconut milk

Brown the diced bacon, diced onions, and sliced ​​garlic in clarified butter until lightly browned. Remove from the heat, deglaze with a can of coconut milk, and blend until smooth with a hand blender. Pour in the cream and remaining coconut milk, season with piri-piri sauce, salt, and pepper. The spiciness of the piri-piri sauce should come through thanks to the coconut and cream flavors. Now add the raisins; the amount varies according to taste. Simmer until a thick sauce forms. Pour the sauce into a casserole dish and add the salted cod fillets. Bake in the oven at 160-180°C for approximately 20-25 minutes. Serve with warm white bread. Tip: Add a little cream and coconut milk to any leftovers, bring to a boil, and stir until the fish falls apart. This makes a delicious fish soup.
