Cod Gratinated in Mustard Sauce in Oven, with Fried Bacon and Leek
The perfect cod gratinated in mustard sauce in oven, with fried bacon and leek recipe with a picture and simple step-by-step instructions.
Sauce:
- Some lemon juice
- Pepper salt
- 2 tbsp Butter
- 1 tbsp Flour
- 125 ml Milk
- 125 ml Cream
- 3 tbsp Mustard medium hot
- 2 tbsp Lemon juice
- 1 tbsp Sugar
- Pepper salt
Bacon and leek:
- 250 g Leek (after cleaning)
- 100 g Bacon cubes, finished product
- 1 tbsp Butter
- Pepper salt
Sauce and preparation leek and mash:
- Let the butter melt in the saucepan. When it is blowing, stir in the flour and let it “blow” briefly. Then pour in the milk and cream, stirring constantly, and bring to the boil until smooth and creamy. Stir in mustard, juice and sugar, season with salt and pepper and season to taste. Keep it hot. Wash and clean the leek and cut into slices about 1 cm thick. Peel the potatoes according to the number of people, cook them in well-salted water, mash them roughly and mix them with the milk (possibly cream), butter, pepper and salt with a hand whisk. Keep hot.
Fish:
- Preheat the oven to 220 ° O / bottom heat. Butter a larger baking dish on the bottom. Wash the fish in cold water, dry it, remove any bones and cut it into several, not too small, portions. Brush them all around with a little lemon juice, season with pepper and salt and place in the baking dish. Spread the hot sauce well over it. The fish must not look out anywhere. Then put the pan in the oven for 10-12 minutes and let the fish simmer in the sauce. It shouldn’t be dry inside, but rather slightly glassy (but not raw).
Leeks and final preparation:
- During this, melt the butter in the pan and fry the bacon cubes in it. When they start to take on color, add the leek slices. Season everything with pepper and salt, turn the heat down, put a lid on the pan and let everything simmer over a mild heat. There is no need to add liquid, it forms by itself through the lid and is sufficient. Nevertheless, stir the leek every now and then, but then close it again. The cooking process takes about as long as the fish is in the oven. Then the leek should be soft with a slight bite and have nice, intended “roasted aromas”.
