Cod with leek, cherry tomatoes and lemon from the oven

Ingredients for 2 servings:

  • 500 g fish fillet(s) (cod fillet), fresh or frozen
  • 10 cherry tomatoes
  • ½ stalk(s) leek
  • 2 tbsp butter
  • 3 tbsp lemon juice, freshly squeezed
  • salt and pepper

Preparation with fresh cod: Preheat the oven to 200°C. Cut the cod fillet into equal, bite-sized pieces. Halve the cherry tomatoes and slice the leek into thin rings. Place everything in a baking dish and drizzle with butter and lemon juice. Season with salt and pepper. Bake in the oven for 10 minutes. I made it with frozen cod: I let it thaw at room temperature for half an hour beforehand (to make it easier to slice), didn’t preheat the oven (!), and put the fish in the oven at 200°C for 10 minutes without any other ingredients. After this time, I added the remaining ingredients. You can adjust the seasoning at the table. Serve with potatoes, rice, or baguette.
