Grilled salmon skewers

Ingredients for 4 servings:

  • 600 g salmon fillet(s)
  • oil
  • ½ lemon(s), juice
  • ½ bunch thyme, fresh
  • 1 bell pepper(s), green
  • 200 g cucumber(s)
  • salt and pepper

Instructions

ideal for grilling in the garden, quick and tasty

Cut the salmon fillet into bite-sized cubes. Mix 2 tablespoons of oil with lemon juice. Toss the salmon cubes with the mixture, cover, and chill for about 20 minutes. Rinse the thyme, shake dry, and pick off the leaves. Toss with 2 tablespoons of oil. Halve the bell pepper, remove the seeds, wash, and cut into pieces. Peel the cucumber and also cut into pieces. Oil wooden skewers and alternate salmon, bell pepper, and cucumber on them. Grill the skewers in an aluminum tray for 6-8 minutes, brushing with thyme oil and turning several times. Season with salt and pepper.
