Cod with Quick Mustard and Cream Sauce

Ingredients
 

mustard sauce

  • 2 tbsp Lemon juice
  • Salt and pepper
  • 1 tbsp Flour
  • 1 tbsp Extra virgin olive oil
  • 1 tbsp Butter
  • 1 tbsp Butter
  • 1 tbsp Mustard
  • 100 ml Cream
  • 1 pinch Sugar
  • Salt
  • 1 pinch Cayenne pepper

Instructions
 

The mustard sauce

  • Melt the butter and mustard in a small saucepan while stirring. Pour in the cream and season with cayenne pepper (or chilli flakes or similar), salt and sugar. Bring the sauce to the boil and reduce a little over a mild heat, stirring occasionally. Cover and keep warm.

The fish

  • Drizzle the cod fillets with the lemon juice, season with salt and pepper, dust lightly with flour. Heat the olive oil in a pan and put the fish fillets in it. Fry for two minutes, add the butter, turn the fillets and fry for another two minutes. Turn off the heat, put the lid on and let it rest. Stir the leaked fish juice into the mustard sauce, this gives a nice flavor.
