Cod with spinach and mozzarella crust on tomato sauce

Ingredients for 2 servings:

  • 1 pack of tomatoes, pureed
  • salt and pepper
  • 2 cod fillets (100-125 g each)
  • 1 onion(s) or shallot
  • 1 garlic clove(s)
  • 300 g spinach, frozen
  • 1 tsp mustard
  • nutmeg
  • 1 ball/s of mozzarella (125 g each)
  • 1 tsp oil
  • 1 pinch(s) of sugar
  • herbs, to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 180°C. Place the passata in a pot and heat. Season with salt, pepper, sugar, and herbs to taste. Then transfer the mixture to a baking dish. Wash the cod, pat dry, season with salt and pepper, and place it on top of the tomato sauce. Peel and dice the onion or shallot and garlic clove, and sauté it in a teaspoon of oil. Thaw the spinach (I always microwave it), then add it to the pan and heat it through. Season with mustard, salt, pepper, and nutmeg and spread it over the fish. Slice the mozzarella and place it on top of the spinach. Bake in the oven for about 20 minutes. Serve with potatoes.
