Ingredients for 1 servings:

  • 30 g xylitol (sugar substitute) or sugar
  • 1 tbsp espresso
  • 50 g butter
  • 1 egg(s)
  • 1 tsp lemon juice
  • 120 g almonds, ground
  • 50 g almonds, chopped
  • ½ tsp baking soda
  • 50 g chocolate for decoration

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Heat the sugar and espresso in a saucepan and let it simmer briefly. Remove the pan from the heat and stir in the butter, egg, lemon juice, almonds, and baking soda. Scoop the mixture into pieces using a tablespoon or so on a baking sheet. Bake at 190°C (375°F) for 15 minutes. After baking, decorate the cookies with melted chocolate.
