Coffee-caramel praline cake

Ingredients for 1 servings:

  • 6 large eggs, separated
  • 6 tbsp sugar
  • 3 tbsp hazelnuts, ground
  • 3 tbsp flour
  • 50 ml oil, approx.
  • 750 ml milk
  • 50 ml coffee, strong
  • 6 tbsp sugar
  • 1 pack of pudding powder, vanilla
  • 1 pack of pudding powder, caramel
  • 250 g butter, soft
  • some rum flavor
  • some biscuits (petit biscuits)
  • 250 ml whipped cream
  • 1 pack of cream stiffener

Instructions

Working time approx. 1 hour; Rest time approx. 12 hours; Cooking/baking time approx. 25 minutes; Total time approx. 13 hours 25 minutes

Wrap cake, for 16 pieces

Sponge cake: Beat the egg whites with a pinch of salt and sugar until fluffy, then beat in the egg yolks one at a time. Add the oil and carefully fold in the flour and nuts. Spread onto a large baking sheet lined with baking paper and bake at 160°C (top/bottom heat) for about 25 minutes. Do not leave in the oven for too long, or it will become dry and brittle. Turn out onto a tea towel dusted with sugar and let cool. Turn the base over again and cut into 6 cm wide strips. The shorter side is the length of the strips. In the meantime, prepare the cream. Mix both custard powders with sugar and stir into the boiling milk. Cook the custard until soft and stir in the coffee immediately. Let cool. Beat the softened butter until fluffy and stir in the cold custard, season with rum flavoring. Spread the cream over the strips, leaving some cream left over for decoration. Place the biscuits on a plate as the base and spread with a little cream to hold them together. Roll the cream strips into a snail shape on the biscuit base and enclose them tightly with a cake ring. Let them set in the refrigerator for a few hours. Mine was refrigerated overnight. Spread the cake thinly with the remaining cream and decorate with whipped cream and cream. I also decorated the cake with chocolates, so it looked like a box of chocolates. The edge is decorated with chocolate sticks (latte macchiato and caramel flavors). This cake is a real treat; you don’t necessarily need to count the calories here; the taste is amazing!
