Coffee pudding

Ingredients for 3 servings:

  • 250 ml coffee, cold
  • 250 ml milk
  • 3 tbsp sugar
  • 1 pack of pudding powder, vanilla

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 1 minute; Total time approx. 6 minutes

This recipe is designed to use up leftover coffee. Coffee is becoming increasingly expensive and shouldn’t be thrown away. In a small saucepan, whisk together the coffee (make up to half a liter with milk; this can vary). Bring to a boil, stirring constantly, then bring to a boil briefly and pour into a bowl. Once cooled, serve with a little cream, if desired.
