Whip the cream until stiff and mix with the quark, 2 tablespoons of sugar, and lemon juice. Pit the plums, cut them into eighths, and slice them. Bring them to a boil with 1 tablespoon of sugar and the cinnamon until soft. Then let them cool. Crumble the leftover chocolate cake and divide half of it between 5 dessert bowls or glasses. Layer the cooled plums on top, without the juice. Reserve a few for garnishing. Place another layer of crumbs on top of the plums and cover with the quark cream. Serve with chocolate sprinkles and the remaining plums. Chill for about 3 hours before serving.
