Cold basil pasta salad

Ingredients for 4 servings:

  • 200 g pasta (basil pasta)
  • salt water
  • 4 tomatoes
  • 1 onion(s)
  • 1 cup of quark
  • salt and pepper
  • 10 tbsp olive oil
  • 4 tbsp white wine
  • 1 tbsp mustard
  • 2 tbsp white wine vinegar
  • 200 g beans (green beans) from the jar
  • ½ cucumber(s), finely chopped
  • sesame oil
  • salt and pepper
  • some cheese, cut into strips

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Cook 200g of basil pasta in salted water until al dente and cool with cold water (they should be cold for the salad). Add 200g of canned broad beans and 1/2 sliced ​​cucumber. Dice 4 tomatoes, finely chop 1 onion, and mix with 1 cup of quark, salt, pepper, and 10 tablespoons of olive oil. Add 4 tablespoons of white wine vinegar, 1 tablespoon of mustard, and 2 tablespoons of balsamic vinegar. Mix the dressing with the cold basil pasta, season with sesame oil, salt, and pepper, garnish with cheese strips, and serve.
