Ingredients for 4 servings:
- 1 ½ cucumber(s), green
- 1 small jar of gherkins including pickle juice
- 1 bunch of dill, finely chopped or equivalent frozen dill
- 1 tomato(s)
- 2 cups whipped cream
- Salt and pepper, white
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Peel the green cucumbers. Grate 3/4 of the green cucumbers and gherkins. Whisk the remaining cucumbers and gherkins with the cucumber broth (amount to taste), cream, salt, and pepper with a hand blender until stiff peaks form. Mix with the grated cucumbers, add the dill, and season with salt, pepper, and cucumber broth, if desired. Garnish the prepared plates with tomato pieces. Serve with hearty bread.
