Ingredients
- 400 g White couverture
- 275 g Coconut oil
- 2 Eggs
- 25 g Powdered sugar
- 300 g Chocolate waffle pastries
- 50 g Fruit mix
- 12 Silicone muffin cups
Instructions
- First prepare a water bath. Chop the couverture. Melt with coconut oil over a warm water bath.
- Beat the eggs and powdered sugar with the mixer until thick and creamy. Stir the couverture mixture into the egg cream. Then put it back on the warm water bath.
- Prepare the muffin molds and add some mixed fruit to each mold.
- Then add some of the cream, place a waffle biscuit on top and cover again with cream.
- Put in the fridge and let it set.
- Before serving, turn out onto a plate and garnish with half a waffle biscuit. You can also grate some dark chocolate over the muffin, but for me personally it would be too heavy when it comes to the sweetness .....
