Coleslaw with bacon and wild garlic oil

Ingredients for 4 servings:

  • 750 g white cabbage
  • 125 g diced ham
  • 1 ½ tsp salt
  • 50 ml oil (wild garlic oil)
  • 50 ml white wine vinegar
  • 1 small onion(s)
  • 2 tbsp sugar
  • Pepper, white or black, from the mill
  • e.g. cream

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 40 minutes

Quarter the white cabbage, remove the stalk, finely chop the cabbage, and toss with the salt. Brown the ham, then dice the onion and sauté it. Set aside to cool. Add the oil, vinegar, sugar, and ham and onion mixture to the cabbage and mix. Add freshly ground pepper and cream to taste and let stand at room temperature.
