Colorful casserole with chicken breast

Ingredients for 6 servings:

  • 750 g chicken breast fillet(s), cut into strips
  • 100 g shallot(s), peeled and quartered lengthwise
  • 750 g bell pepper(s), red, yellow and green, cut into fine strips
  • 2 tbsp olive oil
  • 1 sprig(s) rosemary
  • 1 garlic clove(s), squeezed
  • 150 ml sparkling wine, dry
  • 150 ml chicken stock
  • Salt and pepper, white
  • possibly fennel seeds (approx. 1 tsp)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brown the peppered meat in a casserole dish in olive oil, season with salt. Add the bell pepper strips and shallots, and sauté briefly. Add the garlic, rosemary, and fennel seeds, if desired. Deglaze with sparkling wine and stock. Bring to a boil, then cover and simmer over low heat for 20-25 minutes. Season with salt and pepper.
