Colorful fruit salad with ginger pieces and coconut

Ingredients for 3 servings:

  • 2 m.-sized apples
  • 3 peach(s) , (vineyard peaches)
  • 6 plums (greengage)
  • some lemon juice
  • 4 cubes ginger (sugared ginger cubes)
  • 250 g yogurt (soy, soy yogurt, natural)
  • some raw cane sugar, to taste
  • 4 tbsp desiccated coconut

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

Wash and chop the fruit. Finely chop the ginger and mix it with the lemon juice. If you really like the taste of ginger, let it steep for 3 hours. If you prefer a more subtle ginger flavor, you can serve the salad after half an hour, adding the ginger shortly before eating. For the topping, pour the soy sauce into a bowl, sweeten to taste with the raw cane sugar, and stir in the desiccated coconut. Serve the topping separately from the fruit salad.
