Ingredients for 4 servings:
- 250 g frisée lettuce
- 250 g oak leaf lettuce
- 200 g zucchini
- 100 g wholemeal toast
- 200 g cheese (butter cheese)
- 100 g grapes, blue
- 250 g cherry tomatoes
- 1 tbsp mustard
- 3 tbsp balsamic vinegar
- 6 tbsp olive oil
- 2 tbsp butter
- salt and pepper
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 40 minutes
Trim and wash the lettuce, then tear it into bite-sized pieces. Trim and slice the zucchini. Dice the toast. Cut the cheese into strips. Halve the grapes and remove the seeds, if necessary. Halve the cherry tomatoes. Heat the butter in a pan and sauté the zucchini slices. Season with salt and pepper, remove, and let cool. Toast the bread cubes in the frying fat. Make a dressing with mustard, salt, pepper, balsamic vinegar, and olive oil. Mix all salad ingredients in a bowl and drizzle with the dressing. Serve garnished with the toast cubes.
