Ingredients for 4 servings:
- 300 g pasta (spiral pasta)
- salt and pepper
- 250 g mushrooms
- 1 onion(s)
- 125 g meat sausage
- 3 bell peppers, yellow, red and green
- 1 can corn, 285g drained weight
- 2 tbsp rapeseed oil
- 2 tbsp tomato paste
- 400 g tomatoes, chopped
- Paprika powder
- 2 tbsp balsamic vinegar
- ½ tsp sugar
- 1 bunch of basil
- 50 g sour cream
Instructions

Cook pasta in salted water according to package instructions until al dente. Quarter mushrooms. Dice onion, sausage, and bell pepper, and drain corn. Heat oil in a pan and sauté mushroom quarters with diced onion. Add bell peppers, sausage, and corn and sauté for about 5 minutes. Drain pasta, let drain well, and mix with tomato paste and chopped tomatoes into the vegetable and sausage mixture. Season generously with salt, pepper, and paprika, and season with balsamic vinegar and sugar. Chop basil, mix in, and serve with a dollop of sour cream.
