Colorful Noodle Soup

The perfect colorful noodle soup recipe with a picture and simple step-by-step instructions.

  • 1 liter Vegetable stock
  • 250 ml Mushroom stock
  • 1 bunch Soup greens fresh
  • 2 medium sized Orange sweet potatoes
  • 140 g Drained green canned peas
  • 200 g Mushrooms brown
  • 1 medium sized Red chilli pepper
  • Salt and pepper
  • Pimento
  • Ground caraway
  1. Clean, peel and cut the soup vegetables. Roughly chop the parsley. Brush the mushrooms with a brush. Peel the sweet potatoes and cut into pieces. Halve the chilli pepper, remove the seeds, cut the chilli pepper into strips.
  2. Bring the vegetable stock with the mushroom stock to the boil and cook the soup vegetables, sweet potatoes, mushrooms and chilli strips in it for about 12-15 minutes.
  3. Season the soup with salt, pepper, allspice and caraway seeds. Add the rice noodles and cook in them for about 5-7 minutes. Wash, dry and roughly chop the parsley and add to the soup. Divide the soup in portions on the plates and serve.
