Colorful Noodle Soup
The perfect colorful noodle soup recipe with a picture and simple step-by-step instructions.
- 1 liter Vegetable stock
- 250 ml Mushroom stock
- 1 bunch Soup greens fresh
- 2 medium sized Orange sweet potatoes
- 140 g Drained green canned peas
- 200 g Mushrooms brown
- 1 medium sized Red chilli pepper
- Salt and pepper
- Pimento
- Ground caraway
- Clean, peel and cut the soup vegetables. Roughly chop the parsley. Brush the mushrooms with a brush. Peel the sweet potatoes and cut into pieces. Halve the chilli pepper, remove the seeds, cut the chilli pepper into strips.
- Bring the vegetable stock with the mushroom stock to the boil and cook the soup vegetables, sweet potatoes, mushrooms and chilli strips in it for about 12-15 minutes.
- Season the soup with salt, pepper, allspice and caraway seeds. Add the rice noodles and cook in them for about 5-7 minutes. Wash, dry and roughly chop the parsley and add to the soup. Divide the soup in portions on the plates and serve.
