Ingredients for 4 servings:
- 1 m.-large radicchio
- 1 m.-large romaine lettuce
- 1 m.-large chicory
- 1 medium-sized bell pepper(s), yellow
- 1 m.-large onion(s), red
- 1 clove(s) garlic
- 1 medium-sized lemon(s)
- 1 bunch of fresh herbs
- 5 radishes
- 2 tbsp pine nuts
- 100 g sheep’s cheese
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- Salt and pepper from the mill
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Trim, wash, and drain the lettuce. Peel and finely chop the onions and garlic. Dice the feta cheese. Wash and finely tear the herbs. Mix the balsamic vinegar, olive oil, a squeeze of lemon juice, pepper, and salt in a bowl and season to taste. Slice the radishes, wash, trim, and dice the bell peppers. Add everything except the herbs to the bowl and carefully fold in. Arrange on plates and garnish with the herbs. Tip: Lightly salted flatbread goes well with this.
